Description

Brighten up your gatherings with a fun twist on the classic club sandwich! This pasta salad is a delicious blend of flavors thatโ€™s perfect for any summer occasion.

Ingredients

– 12 oz tri-color pasta
– 8 oz block of sharp cheddar cheese, cubed
– 1 cup shredded lettuce
– 1 tomato, diced
– 1 cup diced cooked chicken
– 1 cup diced turkey
– 1 cup crumbled plant-based bacon alternative
– 1 cup mayonnaise
– 1 packet ranch seasoning mix

Instructions

1. Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the tri-color pasta and cook according to package instructions until al dente. Once done, drain the pasta and rinse it under cold water to stop the cooking process. Allow any excess water to drain, then transfer the pasta to a large mixing bowl.
2. Prepare the Salad Ingredients: While the pasta cools, cube the cheddar cheese, dice the tomato, and shred the lettuce. Also, ensure your cooked chicken and turkey are diced, and crumble the plant-based bacon alternative into bite-sized pieces.
3. Assemble the Salad: In the bowl with the cooled pasta, add the cubed cheddar cheese, diced tomato, shredded lettuce, diced chicken, diced turkey, crumbled bacon alternative, mayonnaise, and ranch seasoning mix. Gently toss everything together until all ingredients are well coated with the creamy dressing.
4. Chill the Salad: Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow the salad to chill for a minimum of 6 hours or preferably overnight. This waiting period helps the flavors meld beautifully.
5. Serve: Scoop the chilled pasta salad into serving bowls and enjoy the delightful flavors reminiscent of a classic club sandwich! Perfect as a side dish or a light meal.
