Ingredients
– 1 cup fruit juice (your choice of flavor)
– 1 cup granulated sugar (plus extra for rolling)
– 1/2 cup water
– 1 tablespoon lemon juice
– 2 tablespoons gelatin powder
– Cornstarch for dusting (optional)
Instructions
1. In a small saucepan, combine the fruit juice, lemon juice, and water. Heat over medium heat until warm but do not bring to a boil.
2. Sprinkle the gelatin powder into the warm juice mixture and whisk continuously until the gelatin is completely dissolved.
3. Gradually stir in the granulated sugar, continuing to heat the mixture until it is fully combined and the sugar is dissolved.
4. Once the mixture is well combined, remove the saucepan from the heat and allow it to cool slightly.
5. Carefully pour the mixture into a silicone mold or a lightly greased baking dish to shape your gumdrops.
6. Let the mixture sit at room temperature for several hours, or until it firms up completely. For faster setting, you can place it in the refrigerator.
7. Once the gumdrops have set, gently remove them from the mold or cut them into cubes if using a baking dish.
8. Roll each gumdrop in granulated sugar to coat evenly. For added convenience, you may also dust them with cornstarch to prevent sticking.
9. Store your delectable homemade gumdrops in an airtight container at room temperature for up to two weeks, and enjoy sharing these fruity delights!
